I've felt really bright and alert this week, I've also been waking up earlier and feeling full of energy - I don't know if that's the potatoes!
This week I made the wedges with sweet chili sauce. They were really yummy but keep your eye on them in the oven as the sweet chili can burn before the pototo cooks. Just keep it on a medium heat.
FAV MEAL was my Jacket Potato with sausages and spring onion and garlic and cherry toms. It was the day before I flew so I didnt want to shop and I just used up everything in the fridge. Was so GOOD. And that's just the beauty of Jackets, you can invent crazy toppings with whatever needs using up!
On the plane I had bangers and mash instead of sweet and sour chicken and rice. The mash kept me really full. When in LA I made eggs on potatoes again. PERFECT for jet lag. Next day I made the Potato and feta greek salad with spinach, that was the perfect side dish for a BBQ.
And last night I went to a Greek Restaurant for dinner. I had grilled octopus with a side of garlic potatoes. YUMMY!!!
I have to be honest, I am ALWAYS FULL, so i'm eating a bit less than I normally do and I haven't put on weight from all the spuds, which is GREAT! x

I love garlic in everything too! I would love your job. I could eat potatoes till the cows come home.
The question is, what is the perfect baked potato? (In terms of preparation methods… topping, condiments etc…)
