I like this for many reasons. But being a diabetic, i was asked by many people to stay away from it. Opine please.

also, when you are making mashed potato, peel the skins off in long strips, quite thick and keep them. Micro them for a few seconds until the potato is slightly soft and the skin bubbly. Pop in the oven until curly and crisp. They make a delicous, virtually fat and calorie free snack or if someone is having mash, you can have these as a guilt free alternative to chips! I eat all the potato skins!

There are so many variations of the potato, each with a unique flavour and baking purpose. It's great fun sampling all the kinds, like red potatoes, sweet, King Edwards, Maris Piper etc...

I love cooking potatoes and then using the leftovers later, new potatoes one night then the next putting the extras into a Spanish Omelette.

We totally agree, thats the lovely thing about potatoes, they are so versatile and cooked either way they are very good for you: fat free, a great source of folic acid & high in vitamin C!
