200˚C/400˚F/Gas Mark 6
2 large baking potatoes
75g Dolcelatte cheese
2 shredded spring onions
1 tbsp creme fraiche
50g sunblush tomatoes, roughly chopped
1 garlic clove, crushed
1 tbsp chopped parsley
1. Prick potatoes all over, cook in the microwave for 10 minutes or until soft.
2. Cut open and gently scoop the insides into a bowl. Add 50g cheese, spring onions, creme fraiche, season and mix well. Scoop mix back into potato skins.
3. Mix garlic, tomatoes and parsley. Sprinkle on top of potatoes with the rest of the cheese and pop under the grill for 1-2 minutes, take out and serve

I feel like trying this receipe during my next holidays ...it will change my routine as I usually just boil some Noirmoutier potatoes (local variety of very small tubercule) served simply with salty butter (local production of Noirmoutier with crispy salt cristal ) and lemon juice.
