Use metal skewers or baking prongs pushed through the potatoes to reduce the cooking time by up to a quarter. Rubbing a few drops of oil into the skin before cooking and sprinkling salt around the potatoes makes the skin extra crispy.

Thanks for the feedback and yes, meat chilli with a nice dollop of sour cream or some grated cheese sprinkled on top would work a treat too!

Nice! I made this and it was great - would use a meat chilli like Stagg next time, hot and spicy potatoes, yum!
