Bombay Potatoes Made Easy

Curry Potatoes
Britain loves curries. This combination of Bombay Potatoes and a curry sauce is an easy recipe and tastes delicious.
Method: 

Place the potatoes in a saucepan and cover with cold water. Bring to the boil and simmer for 15-20 minutes until tender. Drain.

Meanwhile, heat the oil in a frying pan and fry the onion for 3 minutes. Add the curry powder and fry for a further 2 minutes. Stir in the chopped tomatoes, mango chutney and potatoes and cook for 2-3 minutes.

Serve with white fish or chicken and a leaf salad.

This is a great & simple dish. Very tasty & could be served with chickpeas for vegetarians to make a balanced meal.

I was always taught to put potatoes into boiling water. My children, however, put them in cold water. Please tell me why you put them in cold water.

I was very sceptical, but was in a rush so followed the recipe and it was delicious. 

I was taught to put root vegetables in cold water and bring to boil, and vegetables that grow above ground in already boiling water

I was always told that you put OLD potatoes into cold water and then bring to the boil, whereas NEW potatoes should go into boiling water.  This was advice from the 1960s, so the science of cooking may have changed, so feel free to check.
