Hi Sahil,
We would recommend a waxy potato for this such as the Harmony or the Osprey. It should hold together when boiled. Hope this helps

Just wanted more advice, we are an ethnic savoury manufacturer and would like to know which potato you would recommend for a samosa which is filled with loose boiled grated potato.
We currently use peelers and find that dependent on time of year they become very mashy. Is there a potato available that would remain firm throughout the year and is compatively cheap?
