Garlic is an essential in an authentic dauphinois for me. Until now, I've used creme fraiche instead of cream and milk, but I'll give this way a try too. Have you tried it with Binje? It's late and I can't remember the other potato variety I've used.

This wonderful recipe is simple but so, so delicious! Great to impress with. An alternative is to use finely sliced onions instead of the garlic.

Used cheddar and garlic purée - excellent, really simple recipe and tested first class. Had it with small roast turkey joint, asparagus and carrots and honey roasted parsnips. Lovely, though I say it myself.

2nd time that I've come back for this recipe, goes down a treat. Am tryin Boursin cheese spread in with the ceam for a little extra kick.
