Oven Temperature:
200˚C/400˚F/Gas Mark 6
Rub a little salt into the skins before baking to make them extra crispy. If cooking an oven full of potatoes, increase the temperature to 220°C/425°F/Gas Mark 7. Use metal skewers or baking prongs pushed through the potatoes to reduce the cooking time by up to a quarter.
Select even-shaped potatoes and scrub.

This one is pretty easy to make. I also put in a bit of chives, onions and a slash of paprika. It's a great way to use up the skin (which is most of the time left to decompose on the compost pile). I also recomend rubbing the potatoes with a little bit of oil and place some salt around the potatoes on the tray for a little more bite and crunch to the skins. This was a great recipe and I enjoyed doing it.
