800g salad potatoes, cut into 1cm slices
1 red onion, sliced
2 cloves garlic, crushed
250g cherry tomatoes
2 tbsp olive oil
50g pine nuts (optional)
125g feta, crumbled
Preheat the oven to 200oC, gas mark 6.
Place the potato, onion, garlic, tomatoes, oil and pine nuts (if using) on a large baking tray and mix well. Bake for 25 minutes, turning once during cooking.
Stir in the feta and cook for a further 5 minutes until the potatoes are tender. Season to taste. Serve hot.

just made this - delicious!
we didn't have feta or pine nuts so I substituted other cheese & sunflower seeds & pumpkin seeds - worked well
