Grilled Salmon Fillets with Leek & Parmesan Sautéed Potatoes

Ingredients
- 700g British new or salad potatoes (Anya, Charlotte, Maris Peer or Nicola are ideal)
- 4 salmon fillets
- 4 tsp olive oil
- Salt & freshly ground black pepper
- Juice ½ lemon
- 250g leeks, trimmed & thinly sliced
- 1 clove garlic, crushed
- 25g Parmesan cheese, grated
Method
- Put the potatoes in a pan with lightly salted boiling water and cook for 10 – 12 minutes, until just tender. Drain and cut in half.
- Meanwhile, brush the salmon fillets wit ha teaspoon of the oil and place, skin side down on a foil lined grill rack. Season with salt & pepper and sprinkle over the lemon juice.
- Put the salmon to cook under a medium high heat for 8-10 minutes, depending on the thickness of the fillets
- Heat the rest of the oil in a heavy large frying pan, add the potatoes and sautÈ on medium high heat for 5 minutes. Add the leeks and garlic and continue to sautÈ for a further 5 minutes, by which time the potatoes should be golden brown. Remove from the heat and mix in the cheese, season to taste.
- Spoon the potatoes onto a serving plate, serve with the salmon
