Alan Coxon's winning recipe for the Best Potato Recipe in the World 2008!

450g puff pastry
450g Colston Bassett Stilton cheese (chopped)
1 beaten egg yolk mixed with 1 tablespoon milk (for egg wash)
For the potatoes:
600ml full cream milk
300ml double cream
½ teaspoon ground nutmeg
2 garlic clove (crushed)
1.5 kg waxy potatoes, such as Estima, Nadine, or Saxon (Alan suggests Vivaldi, King Edward or Desiree) peeled and thinly sliced, but do not rinse after slicing
For the lamb filling:
30g unsalted butter
1 small onion, finely diced
1 clove garlic (crushed)
450g minced lamb
1 tablespoon fresh Rosemary (chopped)
2 tablespoons flour
1 tablespoon tomato purée
1 tablespoon Ale-Gar vinegar
200ml lamb chicken or vegetable stock
2 tablespoons mint leaves, chopped
1 tablespoon red currant jelly

I made this over Christmas for the family and it is AMAZING!! Definatley worth the effort - Wish I'd made 2 as everyone wanted seconds!!

Excluding the cheese from the pie would make it a healthier but not eaten too often the recipe can be enjoyed as part of a healthy balanced diet.

Thanks for your comment Gillian, we've added some waxy potato suggestions in the ingredients too. It is a complicated recipe but our testers insist it's worth it!

The recipe calls for a waxy potato which you give examples of as Vivaldi, King Edwards or Desiree. These, as you explain else where on the web site, are not waxy potatoes. I think that a floury potato would actually work best in this recipe. Generally the recipe is overcomplicated and poorly described.
