Hi Suanne,
The parmesan cheese is a nice touch. You are absolutely right, this recipe is so versatile that you can add any of your favourite fresh vegetables, plus you can always substitute the chicken for bacon, pancetta or sausage if you fancied a change from chicken....

I sprinkle a bit of fresh grated parmesan cheese on top if I have it, or any hard cheese will do. Also, in the summer, this is a great way to use my fresh tomatoes from the garden.
