This recipe spoilt my friday evening, the cook time is much too short and it needs another 30 minutes to get the sliced potatoes properly cooked. Byy that time the veggies had died!! but when it was eventualy cooked it was fine.

I tried this receipe the other night as i've been looking to use up our bits & pieces in fridge and our potatoes.
Really pleased with the result & hubby even remarked on how tasty it was, the receipe has already been added to my personal receipe book.
Well recommended, i added some steamed brocolli on the side :)

The beauty of this recipe is that it can be enjoyed as a one pot dish. You have your protein and carbohydrates- obviously with all the nutrients of the potato all in there! You might want to add some greens, a few chips or a dollop of mash on the side to bulk it out though!
