400g new or salad potatoes, diced
1 tbsp oil
1 red pepper, diced
1 courgette, sliced
227g reduced fat smoked pork sausage, sliced
1 tbsp tomato pesto
Boil the potatoes for approx 8 minutes until tender, drain.
Meanwhile, heat the oil in a large frying pan and stir fry the pepper, courgette and sausage for 5 minutes.
Add the potatoes and pesto and cook for 1-2 minutes. Serve immediately.
