Spicy Vegetarian Casserole

Ingredients
- 2 tbsp vegetable oil
- 1 large onion, sliced
- 2 cloves of garlic, crushed
- 700g (1lb 9oz) Diced Quorn Pork
- 2 tbsp Plain flour
- 1/2 tsp each of nutmeg, ginger and cumin
- 300ml (1/2 pt) Red wine
- 1tbsp British honey
- 75g (2.5oz) Stoned dates, roughly chopped
- 1 Large Waxy Potato, peeled and cut into chunks
- 2tbsp Fresh herbs, chopped to serve
Method
- Heat the oil and gently fry the onion and garlic for 10 minutes
- Toss the quorn pork in the flour combined with the spices and seasoning and add to the onion
- Fry the quorn pork, stirring occasionally until evenly browned
- Stir in the red wine with the honey and continue to cook over a medium heat, stirring for a further minute
- Add the dates and potato and transfer to an oven proof casserole dish
- Cover and cook for 2-2.5 hours or until the meat is thoroughly cooked
- Just before serving stir in the fresh herbs
