Hi Geoff, The reason they have turned black is because they have been stored in a cold fridge. The cold converts starch to sugar which causes potatoes to darken. Also potatoes bruise as easily as bananas so be careful how you store them or transport them home too. Generally we recommend you keep your potatoes in a cool dark place (not the fridge) and take them out of the plastic bag so they don't sweat. You can store them in a paper bag or hessian bag. Hope this helps!

Would be good if you suggesgested a couple of good varieties in ypour recipes. Tried a few varieties that were not very tasty but finally came across one called Juliettte. Excellent variety for a salad potato.

Hi Liz. There is a link on this website showing the varieties of potatoes and which variety is better used for the methods of cooking.

In this case, the best potato to use for the salad is Anya, Charlotte, Maris Peer or Nicola.
Let us know what you think of the recipe! It's one of our favourites.

I was trying to find out the best type of potato to use for various dishes - especially potato salad - but I couldn't. Is there a section on that type of info?

This is really nice. Would be ideal to take in its bowl on a picnic. It's very generous. I'm sure it would easily serve 6.
