Salsa Jacket Potatoes

200˚C, 400˚F, gas mark 6
Ingredients
- 2 medium baking potatoes (Estima or Marfona are ideal)
- 4 tbsp Salsa relish plus extra for dipping
- 50g Cheddar cheese or mozzarella, sliced or grated
Method (microwave)
- Prick the potatoes all over and place in the microwave for 10-15 minutes or until soft throughout.
- When the potatoes are cooked cut them almost in half lengthways, spoon in the salsa relish, top with the cheese and serve. Or place under a preheated grill for 2-3 minutes until the cheese is melted.
- Serve with a side salad.
For crispy skins, cook the potatoes in a conventional oven at 200˚C, 400˚F, gas mark 6 for 1-1¼ hours or until soft throughout.
