Salsa Jacket Potatoes

Ingredients 

• 2 medium baking potatoes (Estima or Marfona are ideal)
• 4 tbsp Salsa relish plus extra for dipping
• 50g Cheddar cheese or mozzarella, sliced or grated

Method (microwave)

1. Prick the potatoes all over and place in the microwave for 10-15 minutes or until soft throughout.
2. When the potatoes are cooked cut them almost in half lengthways, spoon in the salsa relish, top with the cheese and serve. Or place under a preheated grill for 2-3 minutes until the cheese is melted.   
3. Serve with a side salad.

For crispy skins, cook the potatoes in a conventional oven at 200˚C, 400˚F, gas mark 6 for 1-1¼ hours or until soft throughout.
