Summer Chicken, Orange & Potato Salad

A stunning summer salad contains just 218kcals per portion.
Ingredients
- 500g new potatoes, thinkly sliced
- medium bag leaf salad
- 1 orange peeled and segmented
- 2 roast chicken breasts thinly sliced
- 1/2 bunch spring onions sliced
- 3 tbsp honey and mustard dressing
Method
- Place the potatoes in a saucepan and cover with cold water. Bring to the boil and simmer for 5 - 6 minutes until tender. Drain and cool.
- Mix the salad, orange segments, chicken and spring onions in a large serving dish. Add the potatoes and dressing, and toss well to combine before serving.
